The Roxy cafe, formerly the Shun Kwong restaurant, will open on Wednesday, December 19.
A spokesperson for Gwydir Shire Council said Rupi Saunders and her partner, David, would be moving to Bingara from Oakwood and will live above the cafe. Rupi’s three children are also moving to Bingara and will attend Bingara Central School next year. The children will be in years 9, 8 and 6.
At this stage, the cafe, which will be known as ‘Roobles’, will be open for lunch only. Rupi is, however, planning to open for evening meals once she becomes established, serving south east Asian food.
The Council spokesperson said Rupi had previously lived and worked in small towns. She said Rupi will work closely with Roxy Manager, Sandy McNaughton, but will not be the exclusive caterer for the Roxy Theatre.
Organisations which self cater for functions at the Roxy will be able to still do so.
